Malawi Chef Goes from Sweet to Savory in Pandemic Pivot

But when the pandemic hit, there were few causes for grand celebrations in Blantyre, Malawi where her business is based.

Using her resourcefulness as a “multi-palated” chef, Mbachi quickly pivoted from satisfying the sweet tooth of her local clientele to savory cooking lessons to a global audience over video chat! As we have all discovered in the pandemic, live streamed meetings know no borders! Thus, Mbachi’s savory cooking is now available to anyone who’s interested in taking a cooking class—from her kitchen in Malawi… to your home… anywhere in the world!

Mbachi’s Recipe for Chicken in Tomato Sauce

  • 2 chicken breasts or 2 thigh & legs
  • I medium onion chopped
  • 1 tsp turmeric (optional)
  • 2-3 cloves garlic
  • 1 tsp thyme
  • 1 tsp Rosemary 
  • 2 Tsp lemon juice
  • 1 chicken bouillon 
  • 1 Tsp flour
  • 4 Tsp tomato purée 
  • 3 Tsp cooking oil
  • 1 cup flour

Marinate chicken pieces using the thyme, rosemary, sage (can use Italian spice mix or herbs de Provence since they have other spices too). Season with salt and lemon juice and let them sit for 30 minutes or more ( you can do this a day before and set in the fridge, brining them to room temperature when ready to cook.

Heat oil in a pan. Coat chicken pieces in flour and add to pan. Cook till both sides are brown. Remove from pan. 

Add the onions till cooked. Add the bouillon and tomato paste while cooking on low heat. Once the tomato purée has cooked add 1 cup water and simmer for a minute. Add the chicken pieces to the pan and cook. Thicken sauce with some flour if need be. 

Enjoy with choice of steamed rice, potatoes or pumpkin.
